Let’s be real… we’ve got a lot of kids between the two of us (9 in fact) and it’s always a fun idea to go the extra mile for the start of the school year and want to do something extra special. Every time we’ve tried however, it becomes on more thing to add to the list… until now.
We are so excited about these Vanilla Pencil Wafer Cookies because not only are they super quick to make, but they don’t require any baking. How fantastic is that? These are surprisingly easy and really perfect to add to the first week’s lunch or for a classroom treat. We’re obsessed because these look way more impressive than the amount of effort they take to make which is exactly how we want it to be for us busy moms with limited time, but big ideas.

Tips to Make These Amazing

In order to make this go even smoother and easier than it already is, here are a few of our tips for making these Vanilla Pencil Wafer Cookies.
- Utilize parchment paper to make clean up way easier and keep things neat in the kitchen.
- We included our favorite below, but using a serrated knife is the best way to make the pencil shape for the tip of the pencil, but remember, there is no need for perfection here.
- When you get to the candy melting portion of the recipe, let the candy melts cool a little before dipping to prevent any unwanted dripping.
- For the tip of the pencil, you can use any chocolate you have on hand, such as mini M&Ms or mini chocolate chips. Keep it easy.
- If you want your kids to help, this is the perfect fun afternoon activity that the kids can help with. They’ll love dipping the wafers and adding the candy tip to the cookie.
- Once you’re done, we recommend storing them in an airtight container so they can last longer. This will also help you get ahead and stress-free if you want to make them ahead of time.

- Wilton Craft Supplies, Pink – These are so fun to add that little pink detail at the end. Makes the pencil look real and the kids always notice!
- Tovla Jr. Knives for Kids – If your kids want to help make the treats, these are the best. They’re safe but still do the job, and my kids love feeling like little chefs.
- Gullon Sugar Free Vanilla Wafer Cookies – These are what we use to make the actual “pencil” part. The shape is perfect and they taste really good too!
- M&M’S MINIS Milk Chocolate Candy – One little mini M&M on the tip makes the “pencil lead” and totally finishes the look. Plus you get to snack on the extras while making them.
Vanila Wafer Pencils Recipe

Ingredients

- 1 package sugar free vanilla wafer cookies
- ¼ cup pink candy melts
- ¼ cup white chocolate chips or white candy melts
- 1 tablespoon mini chocolate chips
Directions




- Prepare your work surface by laying down a sheet of parchment paper.
- Use a serrated knife to cut the corners off one end of each vanilla wafer, creating a pointy pencil tip shape.
- Melt the pink candy melts and dip the opposite (flat) end of each wafer to make the pencil eraser. Set on parchment to harden.
- Melt the white chocolate and dip the pointed tip of each wafer, then immediately press a mini chocolate chip at the very tip to look like pencil lead.
- Let all wafers sit on the parchment paper until completely set and hardened.
Storage Tip: Keep your vanilla wafer pencils in an airtight container for up to one week.
